Peach & Chilli Chutney
Makes around 2 jars.
Ingredients
- 1tbsp vegetable oil
 - 1 white onion sliced
 - 700g peaches deskinned and finely chopped
 - 3 red chillis finely chopped
 - 200g soft light brown sugar
 - 250ml apple cider vinegar
 - 1tbsp cumin seeds
 - 15 cardamom seeds
 - 1 thumb sized piece of ginger cut into matchsticks
 
Method
- Cook onion on low/medium heat until soft.
 - Add all other ingredients and stir.
 - Reduce heat and simmer until liquid has mostly evaporated.
 - Transfer to sterilised jars.
 
 
 
 
Sam and I grew our own chillis this year and where we now live in France there are peach trees! When the peaches fall to the floor they have about a week before they are bruised and rotten so you have to be quick to use them! The pictures in this recipe show a tripling of the recipe as we had lots of peaches to use!
